Black bean & Arugula Stuffed Sweet Potatoes with Poached Eggs

Ingredients

4 medium sweet potatoes

1 can black beans, rinsed and drained

4 oz fontina cheese (Parmesan works well too), grated

2 C arugula

1t olive oil

1/2 lemon, juiced

salt and pepper to taste

4 eggs, poached to desired doneness

directions
  1. Bake sweet potatoes: preheat oven to 425. poke sweet potatoes with a fork and place in preheated oven on a baking sheet for 30 min., then reduce oven temperature to 350 and back for an additional 30-40 minutes.
  2. about 10 minutes before sweet potatoes are done, prepare the remaining ingredients:
    1. drizzle olive oil, lemon juice, salt and pepper onto arugula
    2. warm black beans
    3. cook eggs as desired
  3. assemble by slicing potatoes and pushing the ends to open, add cheese, black beans, arugula mixture and top with poached eggs.
