28 Apr Rainbow Noodle Salad with Soy Tahini Dressing
Living in Arizona, I feel like allergy season is every season that it is not “the surface of the sun” hot. And for whatever reason (probably the massive amounts of rain we got this “winter”) my allergies are so bad right now. Sinus, eyes, throat and even a horrible cough, is making me curse these “cooler” temperatures and wistfully awaiting the arrival of 100 degree days. They will be here soon enough.
I am sure I have stated this before, but living on the surface of the sun means I consume a lot of salads throughout the year. Big, leafy green salads with as much fresh produce as I can jam into a bowl! All those spring and summer veggies have super high water contents, and theres no need for a stove top, oven or grill, so no added heat is required, salads are really the most refreshing choice for warm, er HOT, weather. This little salad comes together pretty quickly; I made them in 4 separate to go containers, storing the dressing separately, and VIOLA! lunch for the week was done.
As always, any non-vegetarian followers, grilled salmon or chicken atop this salad would be amazing, but not necessary. Let me know how well your families liked it!
Rainbow Noodle Salad with Soy Tahini Dressing

Ingredients
6 ounces soba noodles (cooked per package directions)
2 cups julienned carrots
2 cups shredded red cabbage
1 bell pepper, seeded and sliced
1 medium cucumber, sliced
1 broccoli crown, separated
2 cups cooked and cooled edamame
1/2 cup sliced green onions
Dressing
3 T soy sauce, tamari or liquid amino acids
juice of 1 lime
2 T sesame oil
1 T honey or agave syrup
2 cloves garlic, pressed
1 T tahini
1 t crushed ginger
1/2 t sriracha
Directions
Mix ingredients for dressing in small bowl, and whisk.
Divide salad ingredients between 4 bowls. Serve with dressing on the side.
**If you are storing for lunch, do not add dressing to the salad, the noodles will absorb all the dressing and your salad will feel dry***
