Honey Lime Chicken Breast

The week after a long weekend is always the hardest to get through. It’s a shorter week, but most of us still need to fit in the same amount of stuff. Makes for a super busy week. My to-do list this week included buying a new pair of running shoes! Last week, I made my first attempt to run since back surgery #2, kept it slow and all went well! No back pain! YAY! I thought I ran at a slow pace before I hurt myself, well, now I am even slower. It’s more of a slow jog. Maybe a fast walk… Another milestone in the bank!

The recipe this week is an oldie that I’ve been making for years. It has a lot of honey in it, so the sugar content is high, so I try to make sure I pair it with high fiber foods, garden salad, broccoli slaw, etc. This time I paired it with some homemade baked sweet potato chip that turned out AMAZING (recipe coming soon)! I hope your family enjoys it as much as mine does!

Honey Lime Chicken

To make the marinade: Mix lime juice, garlic and honey in a resealable plastic bag.

Next pound the chicken to 1/2-1/4 thickness (place the chicken breasts between two pieces of plastic wrap to contain any possible splatter) and place chicken into plastic bag with marinade.

Smoosh the ingredients so that the chicken is coated with the marinade; place in a bowl and refrigerate for a few hours, or overnight.

When you’re ready, preheat a grill over medium high heat. Grill chicken for about 3 to 4 minutes per side, or until the inside is no longer pink. Discard any remaining marinade.

Serve on a bun with sliced tomato and honey mayonnaise.


Honey Lime Chicken 

ingredients

2 chicken breasts, boneless, skinless and pounded to about 1/4” thick

2 cloves garlic, pressed

juice of 1 lime

2 Tablespoons honey

tomatoes

Honey Mayo (see below)

4 hamburger buns

Directions

Combine garlic, honey and lime in a resealable bag; squish it around so the honey dissolves. Add chicken breasts to bag, and allow to marinate for 2 to 3 hours, or overnight.

Heat grill to medium high heat, and grill chicken breasts (disregard remaining marinade) approximately 3 to 4 minutes per side, until chicken is no longer pink in the center.

Serve on toasted buns with sliced tomato and honey mayonnaise (equal parts honey to mayo)

Possible sides include: cole slaw, sweet potato chips, cucumber salad, oven backed fries, tater tots.
