Breakfast Sweet Potato

ingredients

4 medium sweet potatoes, baked

4 slices of bacon, cooked and crumbled

1 medium onion, diced

2 cloves of garlic, minced

1/2 tablespoon maple syrup

4 eggs

  • Scoop out flesh from baked sweet potatoes, chop if necessary
  • in a saute pan, over medium heat, saute onions and garlic in olive oil until onions are soft
  • add sweet potato flesh and cook for 3-5 minutes; add crumbled bacon and maple syrup; remove from heat
  • place sweet potato mixture evenly into individual ramekins, creating a divot in the middle, and crack eggs into divot, adding salt and pepper to each egg; place ramekins on baking sheet
  • bake at 400 degrees for 15-20 min, until eggs are set.
