20 Jun Mexican Roasted Chickpeas
Ingredients
15 ounces chickpeas, rinsed and drained
1 t chili powder
1 t ground cumin
1/4 t garlic powder
1/4 t onion powder
1/2 t salt
2 t fresh lime juice
1 T olive oil
- preheat oven to 400 degrees. Place drained chickpeas in a clean dish towel; remove skins and let dry for 3-5 minutes; place in medium sized bowl
- in separate bowl, combine the rest of the ingredients and add to the chickpeas; stirring until well coated.
- spread chickpeas in an even layer on a parchment covered baking sheet. Cook for 30-35 minutes, or until crispy on the outside. Stir every 10 minutes or so. Once they are crispy, remove from oven and let cool.
