With the holidays fast approaching, many of us have so much going on: shopping for gifts, relatives in town, or traveling to see friends and family, parties to give and attend, so on and so on. Frittatas are great one dish meals that come together quickly, can easily be doubled to feed a crowd and works for both breakfast or dinner! Breakfast for dinner always feels kinda special, and this frittata can accomplish that on a weeknight!!
Yes it has bacon YAY BACON! If you have to choose between sausage and bacon, bacon is the nutritional favorite (less calories and less fat per serving). Bacon adds so much flavor a little goes a long way. However, if you are vegetarian, the bacon is easily omitted. I’ll often add toasted sour dough bread and, if I’m serving this for dinner, a good spring mix salad with a light vinaigrette finishes off the meal nicely.
I used an oven safe saute pan, but a cast iron skillet works really well! The potatoes, peppers, onions, mushrooms and bacon go in the pan, and into the preheated oven.

After baking for 40 minutes (stirring at least once during that time) you pour in the eggs

Stir in the tomatoes and pour the eggs, then back into the oven for another 10 minutes, until eggs are set.

Allow to cool for 2-3 minutes, and slice to serve!

Peppers, Potatoes, Onion, Mushroom and bacon Frittata
Ingredients
1 pound red potatoes, diced
1 small red onion, diced
1 bell pepper, seeded and diced
8 medium sized mushrooms (about 6 ounces)
1 Tablespoon olive oil
1 teaspoon salt
4 slices of bacon, chopped
1 large tomato, seeded and diced
8 large eggs, beaten
Directions
- Preheat oven to 425 degrees
- In oven safe large sauté pan (or a cast iron skillet is great for this), mix potatoes, peppers, onions, and mushrooms with olive oil and salt. Top with uncooked bacon pieces, place in oven for 40 min, stirring about halfway through.
- Remove skillet from oven and stir in tomato. Pour beaten eggs into skillet and return to oven for another 10 minutes, until eggs are set.
Serve with large slices of sour dough toast,
