So the last two days have been in the upper 90's, and we have even hit 100 here in Arizona. Welcome "Spring"! We've just turned our air conditioning on here, so I am writing this with a hoodie on, since my husband likes to duplicate the weather in Northern Alberta in February. Spring means its officially the start of grilling season in the East, and north - and anywhere where it dips below 50 at any time of the year. The recipe I am sharing with you today was originally titled "Spring Chicken" but I thought that was deceiving, since we make it throughout the year.

Thanks to a very busy teaching schedule, I've been creating new original recipes, but haven't had a chance to share them with you! As a fairly new yoga teacher, one of my worst teaching nightmare actually came true last week. New teachers usually do not have a lot of classes, so they tend to sub for more experienced teachers when they have an opportunity. This can be opportunities for amazing learning experiences, as many of these classes are pretty full with experienced yogis and as a new teacher, this may give us an opportunity to teach a style we don't normally teach; stepping out of our comfort zone. What should I expect if I hire a health coach?

You made the commitment and hired a health coach. What happens now? I've tried to provide you with a brief description of what the experience is like based on my personal experience or how its been described to me by health coaches and others who have used the services of a heath coach and were satisfied with those services.

The newest trend in the health and fitness industry is the rise of the Health Coach. I bet you know at least one person who is currently a health coach. Personally, I have my own health coach and I know several people who are health coaches. But before you shell out upwards of $100 a month, lets take a closer look at the title, the profession and some things to expect. 

I am a cold weather girl: the boots, the sweaters, the layers, the warm-you-up-from-the-inside food, all of it (or should I say FALL of it?!? LOL) Here in Arizona, fall is slow to show up and it's over so quickly, I try to savor the moments. Our overnight low temps are finally dropping into the 60's, and day time highs are just under 100, so I guess fall is close!

Besides carbohydrates, bacon is one of my favorite foods. Especially to cook with. One of the things I appreciate most about the smokey slab of pork is that you don't need a lot of it to make a flavor impact on any dish! A little bacon makes everything better. Add some beer and you've got a dish made for loving! This risotto is great as a meal onto it's own with a little garden salad, or makes a perfect side to grilled chicken, or a juicy, tender filet....

Recently, I was grocery shopping at a store I don't normally shop at, and I needed diced tomatoes for my vegetarian chili recipe. Often I will just buy fresh tomatoes, dice them myself, but that isn't always practical, so when that is the case, I like to buy the tomatoes in a box, not in a can. In fact, I try to avoid anything in a can.   If I can't buy it fresh, I'll resort to frozen, but only canned if I am seriously desperate. This is usually a great policy for most foods, except tomatoes.

So, it's really been awhile since I have posted. Our lives have been going through some fairly big changes, and I'm teaching more classes, and even some other formats. I also really wanted to work on formatting my site to be prettier, more professional looking. I haven't gotten around to it yet, but soon, hopefully! I made this little dish after I taught my Monday yin yoga class; its one of those recipes that comes together pretty quickly, is vegetarian (depending on the ravioli you choose) and is absolutely delicious!
