Since my back surgery in December, I have managed to maintain my pre-surgery weight (wasn't as successful the first time), and with January being a fairly hectic month in my house, I really needed to clean up and reset my nutrition. I hear a lot of people talking about the latest "cleanse" to start the new year off "on the right food", so I made sure to track everything I ate over 7 days and kept my diet as free from processed foods and added sugar as I possibly could. Let me explain my approach.

I haven't had a chance to solidify any new recipes for this weeks post, it's been crazy busy here. My daughter had a car issue while she was out of town we had to help her with, which put me behind schedule. Then the Phoenix Open golf tournament was in town, and several companies my husband does business with gifted us tickets, so thats a few days gone. And of course, hockey. And laundry. And life....

It's still January, and it's been pretty cold and rainy. Not as cold as it can get in other parts of the country, but for this area... it's our version of winter. With it being so gray and overcast (which I love, for what it's worth), sometimes I just crave a bright and vibrant meal, filled with fresh flavors and bursting with color. This recipe is a go to for me for just those moments.

Hey guys! Do you ever feel like you just can't get it together? Yeah, I am definitely having one of those weeks. My back brace finally came off last week, and the doc told me to slowly get back at my normal activities, which I obviously translated to "do all the things". I'm learning the difference between uncomfortable and stop doing that, sometimes backing off a bit is required so that you can progress deeper into life. With 2 back surgeries within 9 months, I am developing my new normal. *sigh* Meanwhile, in my kitchen, I am excited to finally be able to share this recipe with you. My husband is not an adventurous eater; if he can't identify it, hasn't eaten it before, he is very hesitant to step out of his food box. I am the exact opposite; I will literally try just about anything and with a few exceptions, I like every thing I try. Indian food has always been a favorite, but not something the hubby has been willing to try. 

First, I feel like I should preface this with I am not a journaler. I kept a diary briefly when I was a preteen (I am pretty sure I still have it in a box in my garage somewhere), but I have never have a deep desire to jot down my feelings or whatever those who do journal write about. That being said, there is some new research backing the benefits of journalling; from an increased mindfulness, people who maintain a diary tend to be happier and report feeling more connected to themselves and their emotions, and writing down your experiences seems to help some people work through difficult issues, kinda like a personal therapy on paper. So I wanted to give it a try.
