Last week was the summer solstice - the longest day of the year, the first day of summer - and we are officially on our way to fall! The temperatures in the Phoenix area are just starting to hit their peak - 111 the day after the solstice, like mother nature knows how to interpret a modern calendar.  Of course, most of us have already been in the full swing of summer,

Thanks to a very busy teaching schedule, I've been creating new original recipes, but haven't had a chance to share them with you! In an effort to create more balance, I'm trying to set aside specific blocks of time dedicated to keeping you up to date with my latest and greatest recipes, as well as fitness and healthy lifestyle tips. I've made this particular recipe a few times since I created it, and its been fabulous each time. Originally, I was looking for an alternative to shake and bake chops;

The week after a long weekend is always the hardest to get through. It's a shorter week, but most of us still need to fit in the same amount of stuff. Makes for a super busy week. My to-do list this week included buying a new pair of running shoes! Last week, I made my first attempt to run since back surgery #2, kept it slow and all went well! No back pain! YAY! I thought I ran at a slow pace before I hurt myself, well, now I am even slower. It's more of a slow jog. Maybe a fast walk... Another milestone in the bank!

I recently sat in on a talk about flexible macro counting by the Lululemon Scottsdale Quarter ambassador, Kacey Luvi ; avid cross fitter, busy mom and fellow blogger (if you are interested in macro counting click on her name above and she gives a pretty good explanation and how to on her blog). She reminded me of the need to be consuming enough calories to fuel your body. As a woman, I believe our society rewards us for eating "like birds" and as we integrate that habit into our daily lives, the desire to cut calories in order to lose weight becomes second nature to us. Personally, I can find myself falling into the same trap often. Kacey talks about "reverse dieting" on her blog as well. 

Okay, so I love carbohydrates, I would never survive on the Atkins' no carbs diet. But I am selective in the carbohydrates I eat, they have be chockfull of nutrients, no empty carbs here. I also love a good hearty meal, and this recipe really...
